I can smell them now!! My Mom's Peanut Butter Cookies. She always had a sweet tooth and knew just how to quinch it. Even though she wasn't famous for her cooking, she made some darn good Cookies. Especially Peanut Butter ones! This recipe holds a very special spot in my heart and I am so happy to be sharing it.
Ingredients:
1 Cup Honey Roasted Crunchy Peanut Butter
1 Cup Sugar
1 Egg
Preheat oven to 375.
Spray or line Cookie Sheet Pan
Mix all ingredients in medium size bowl. Refrigerate mixture for about 30 minutes or until chilled and firm.
Spoon dough by the teaspoon on to the pan. Make sure to leave enough spacing between each cookie. 1-2 inches.
Bake for 10 minutes.
Remove from oven. Using the back of a fork press the top of the cookie lightly making lines. Again press the fork the other way making a # symbol on the top of each cookie.
Bake for another 5 minutes or until slightly crispy and golden.
Let them cool completely or they will crumble very easily. Enjoy!

Makes 12 cookies.
Store in sealed container or bag.
Dough can be refrigerated up to 24 hours for later use.
